Over the course of the next year or so this site will give explanations and examples of critical food safety topics. There are 8 different sections of critical items listed on the restaurant inspection form which will be discussed here with new information being added on a new section about every other month. These items are the primary focus of food service inspections and should be your primary focus in your home kitchen as well. Each section listed above has several subsections that will be described as we go through the list individually. While there are sometimes large scale food borne illness outbreaks that are linked to food service establishments, there are also a great number of food borne illnesses that come from the home as well. Home kitchens are not inspected and often times the people using them haven't had any training in food safety. The information provided on this site is meant to help change that. Hopefully the information provided here will give you a better idea of the importance of food safety and also help to dispel some common myths.
